White Queso

Here is my quick little Queso recipe, to use at home. If you are going to use it for a party or gathering, you may need to use a little more half n half,  milk or water to thin it out. I personally like it a little thicker, but for transportation purposes, and having it sit out for a longer period will require you make it thinner.

1lb of a good quality deli American cheese (white)
1/2 lb Pepper Jack
1 1/2 cups half n half ( to start)
tsp cumin
tsp red pepper
dash salt
pepper to taste
1 diced seeded Jalapeno (fresh)
1 diced baby yellow / red pepper (fresh)

In a double boiler (if you dont have a double boiler, use a pan and a stainless steel mixing bowl) bring your water to a boil, and decrease the heat to a slow boil / simmer. Cut your cheese into cubes and add to the top boiler. and place over the water. as the cheese starts to melt add the half n half and continue to stir. add in the remaining ingredients. and stir. it may at first appear to thin, but once you turn off the heat it will thicken up. to thin out,  turn off the heat, and add an additional 1/2 cup of half and half at a time. to desired consistency.
