bruschetta

For a late night snack or an appraisal to please… Making the night before is best, but day of is fine too.

1 load French bread

1 package of cherry tomatoes, or 2 tomatoes

1/2 C: balsamic vinegar

1/4 C: olive oil
2 cloves of garlic minced
Salt n pepper

Fresh Mozzarella

Preheat oven to 425

Cut french loaf on a bias into 1/2″ pieces. Brush with oilve oil and place on a cookie sheet. Put in oven and toast (about 5-7 minutes)

In a Mixing bowl mix all ingredients. Place the mixture on each piece of toasted bread. Top with fresh parmesan. Serve
