Roast beef

Love Roast Beef….slow roasted, smoked, sliced for sandwiches or covered in gravy. Any way you cut it….it hits the spot. If your looking to make French dip, or want deli roast beef for sandwiches here is a simple recipe to make your own, it’s a little healthier and more cost effective then making a stop at the grocery store deli.

2 to 3 lb eye of round trimmed
Equal parts basic rub:
Sea salt
Cracked black pepper
Onion powder
Garlic powder

Roast at 225 uncovered for approx 2 to 2.5 hours or until internal temp is 120 to 125 max. Heat a cast iron skillet to high heat (with evoo) sear all sides to create a nice crust. Transfer to a cutting board and follow the Instructions below to finish:

For a roast with mashed potatoes and gravy: Slice thin and serve.

For deli style meat: let rest on counter for 20 minutes. Seal tightly and refrigerate for 3 hours or over night. Pull out of the fridge and slice thin.

For A French dip: heat beef Au Jus in a pan, Slice the beef thin, and place in the Au Jus to heat up. place in a french loaf. Add Cheese and Caramelized onions (optional) Serve with a small cup of Au Jus for dipping
