A quick and tasty version of a child hood favorite.
4 boneless chicken breasts
4 slices ham – thinly sliced
4 slices Swiss or Provolone cheese
1 egg, whisked
2 tbsp: water or milk
1 cup Italian seasoned breadcrumbs (to make: Bread crumbs add 1 tbsp Italian seasoning)
¼ cup shredded Parmesan cheese
Quick sauce for finish
3 tbsp: salted butter
3 tbsp: flour
2 c milk
3 tbsp: dijon mustard
1 tsp: garlic powder
⅓ c Parmesan cheese
salt and pepper to taste
for the sauce: Over medium heat add all the ingredients and whisk until well blended.
Preheat oven to 375
Cut the chicken down the side creating a pocket within the chicken. Stuff with Cheese and ham.
In a bowl whisk the egg and milk (or water), On a plate mix the breadcrumbs and Parmesan cheese.
take each piece of chicken and place in the bowl with the the egg mixture fully covering each piece (one at a time)
next take each piece of chicken on to the plate with the breadcrumbs and coat evenly until covered. then place in a baking dish or on a cookie sheet. Cook for approx 20-30 minutes or until done. remove from the oven and let rest for 5 minutes.
Plate and drizzle with sauce. and serve
