Cabbage Soup

Since journeying onto the path of Keto to try and reel in my weight, and health, it has been a challenge to change up nightly dinners and routines. For instance during the week the go to’s have always been quick Italian (spaghetti and Lasagna), or Asain (rice and noodles). I never realized just how bad my carb intake really was until I started to try and make foods I was accustomed to eating. Although this will not be a weekly go to recipe (Im not a eat a soup to often type of guy), It is one that definitely will be on the monthly “lets change it up” list.

Remember that Soups are always interchangeable, and adding a little of something you have on hand can add flavor! Some healthy ingredients that would go well with this cabbage soup, could include: Cauliflower, Green Beans, Tomatoes,and spices like: Oregano, Thyme, and Paprika. If your like me you may also want to add a little chicken, or beef. Experiment and let us know!

Ingredients

1 onion – chopped

2 carrots – chopped

3 to 4 Celery stalks – chopped

1/2 Cabbage – chopped

1/2 c Parsley – chopped

6 garlic cloves – minced (or a hefty spoonful of canned pre-chopped)

4 quarts Chicken stock, or veggie stock. (canned or homemade)

Dash of salt and pepper to taste.

Combine onions, carrots, celery, and garlic with a little EVOO, and saute until onions are translucent and the smells of garlic are in the air! Add the stock, and bring to a boil. Add in the Cabbage, Parsley, Salt and Pepper. Stir. Reduce heat and simmer for 30 to 40 minutes, and serve.
