Chicken Fried Rice

Here is a quick and simple weeknight meal that wont break the bank, or take hours to make.

Recipe:

1/2 stick butter
1 diced or cut up chicken breast
1 to 2 cups Frozen diced carrots and peas (or fresh)
2 garlic cloves – diced
1c White or brown rice
2c water
2 tbsp soy
3 eggs – scrambled
Salt and pepper to taste

Cut or dice chicken to your desired size, I prefer mine finely diced. Add the butter to your skillet (set to med/high) and let it start to melt, add the diced chicken and saute for approx 2 to 3 minutes add the veggies, and garlic and continue to cook for approx 2 more minutes. add the rice, and water bring to a boil, cover and reduce to simmer for 15 minutes. in a separate pan, scramble the eggs and set aside. after the 15 minutes remove the lid, stir the rice, add the egg, soy and salt and pepper to taste. plate and serve!
