Cajun Shrimp and Rice

Not really sure where the original part of the recipe came from. but started from a copy of a recipe given to my girlfriend as her and a co-worker were discussing what they had for Valentines dinner. If I can locate the original, or who created it, I will edit and add a comment / link. I will say that this turned out way better then I anticipated and therefore added it here as something to not only share, but keep for my future use. Bottom line….It was good! the original recipe was more of a soup (shrimp and sauce) and served with french bread or over grits. we added the rice and veggies to make it how we like it, and add more of a dinner feel vs a soup. Enjoy!

Recipe:

Rice:

1c rice – If brown add an additional ½ cup water and 5 minutes to cook time)

2c water

¼ stick of butter

1 small onion chopped

1 small red pepper chopped

1 yellow / orange pepper chopped

1 jalapeno seeded and chopped

1 Zucchini squash (or ½ Zucchini squash and ½ yellow squash) chopped

In a deep pan add butter and heat on med high until melted. Add the veggies and sauté for approx. 5 minutes. Add the rice, stir then add the water and bring to a boil add salt and pepper. Cover and simmer for 15 minutes, or desired doneness.

Shrimp and sauce:

2 dz shrimp

1 stick butter

Tsp garlic

¼ c Shrimp stock

¼ cup beer

¼ c Worcestershire

Seasoning:

1 tsp cayenne

1tsp Black pepper

½ tsp salt

½ tsp Crushed red pepper

½ tsp Dried Thyme

½ tsp Rosemary

½ tsp Oregano

Rinse and drain shrimp. IN a deep pan add butter let melt. Add the garlic cook for approx. 1 to 2 minutes and then add shrimp, and seasoning. Stir. Simmer for approx. 1 minute, add shrimp stock, Worcestershire and beer. Bring to a boil. Once boiling reduce heat, cover and simmer.

To serve:

Put rice in a bowl / on plate, top with Shrimp, pour over some of the buttery liquid.
