Zucchini Parmesan

The Girlfriend made me do it! We will say I don’t understand how you can “Parmesan” anything other than chicken, but I guess you can and here is the proof. She said it was good, it looks good, so I am going to assume it is good. If you think it can be better by all means add comments below and let me know!!!!

The recipe:

1 lb: zucchini or squash (about 2 medium-sized)

1/4 cup: shredded Parmesan (heaping)

1/4 cup: Panko breadcrumbs, or Italian Panko Breadcrumbs (heaping)

1 Tbsp: olive oil

1/4 teaspoon kosher salt

freshly ground pepper, to taste

Preheat oven to 325 degrees.

Slice zucchini or squash into 1/4 inch-thick rounds. Toss rounds with oil, coating well.

In a wide bowl or plate, combine breadcrumbs, Parmesan, salt and pepper. add the zucchini and cover both sides in the mixture.

coat the bottom of a baking dish with marinara, and then place a row of zucchini. cover with sauce, and cheese, top with another zucchini, and repeat. on the last last zucchini top with sauce and tons of cheese.

Bake at 325 degrees for 30-45 minutes uncover increase to 375 and cook for 10 more minutes to brown cheese.
